Cheesy Chicken Casserole

What you need:
  • 2 cups cooked chicken, cut into bite sized pieces (I bought a rotisserie chicken at Costco and used the white meat after removing the skin)
  • 32 oz. chicken broth or chicken stock
  • 1 to 2 cups water
  • 1 lb. pasta (I used rotini)
  • 10.5 oz can of cream of chicken or cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 to 3 teaspoons garlic powder
  • 2 to 3 teaspoons garlic & herb flavored seasoning


What you do:
  1. Preheat oven to 375 degrees.
  2. Grease a casserole pan (TWO if you are using a shallow pan).
  3. Pour the chicken broth/stock and water into a large pot and bring to a boil. 
  4. Add the pasta and cook for the shortest time listed on the instructions found on the box. 
  5. After the pasta is cooked, stir in the chicken, can of soup, cheddar cheese, garlic powder, and garlic & herb seasoning. Cook over medium heat for 3 to 4 minutes.
  6. Pour into greased casserole pan and top with mozzarella cheese. Bake for 25 to 30 minutes. Broil for about 2 minutes if you’d like to crisp up the top.
