Minty Watermelon Basil Ice Pops

We really have been having the dog days of Summer recently and we have all been trying to find ways to beat the heat.  These Minty Watermelon Basil Ice Pops are the perfect solution for kids and adults alike!!! Labor Day is just around the corner and all of our backyards will be filled with friends and family, trying to squeeze in every last minute of summer we can get. These pops can keep guests of all ages happy. The kids can eat them as is for a refreshing treat but the real wow factor comes when the adults try them. Place a Popsicle in a wine glass and top with Prosecco or your favorite sparkling wine!!! It is my new favorite summer cocktail and the Popsicle brings out my inner child. What’s not to love?!




Minty Watermelon Basil Ice Pops

Ingredients

½ of a seedless watermelon, cut into cubes

1 Lime, juiced

2 tbsp. Fresh Mint Leaves

2 tbsp. Fresh Basil Leaves

(Note: You can adjust the fresh mint and basil to your taste. I just found this was the best balance of flavor.)


Directions

In a blender add watermelon cubes, lime juice, mint and basil. Blend mixture until fully pureed. Once pureed, taste to see if you want to add more basil, mint or lime juice. It is totally customizable, it’s why I love these so much!!! Once you are satisfied with the taste, pour the pureed mixture into a sieve and press out all the juice. You will have a pretty pink liquid that you can now pour into Popsicle molds or little Dixie Cups. Freeze for at least 6 hours or overnight.
