Sweet Potato Toasts

I have a fun and inventive new after school or anytime snack for kids of all ages and all you need is a toaster. I actually enjoyed this as a post workout snack. This snack can be prepped ahead so that it is ready for the kids when they come home. You can slice the sweet potatoes beforehand and create a toppings bar so the kids can be creative. Let their imaginations go wild!!!

Basic Sweet Potato Toasts

Ingredients: 1 large sweet potato scrubbed and cleaned, cut into ¼ inch thick slices

Directions: Wash and scrub the sweet potato. Slice off the ends of the sweet potato and slice the sweet potato into ¼ thick slices. Insert the sweet potato slices into the toaster like you would bread slices. Set your toaster to the highest setting. If the sweet potatoes brown too quickly, lower the setting to medium. You will know the potato is done when you can pierce it easily with a fork. My toaster cooked it in one try.

Apple Almond 1 Apple, sliced 1 tsp. Crunchy or Smooth Almond Butter

PB & Banana
½ Banana, sliced 1 tsp. Peanut Butter Drizzle Honey Sprinkle of Cinnamon

PB & J 1tsp. Jam or Jelly 1 tbsp. Favorite Nut Butter

Tex-Mex ½ Avocado, sliced 1 tbsp. Salsa homemade or store bought

Pizza Toast
1 tbsp. Tomato Sauce Top with Mozzarella Cheese Dried or Fresh Basil to taste
