BELLA FOODIE FRUIT PIZZA RECIPE

Easter is on its way and many of us are planning brunches with our loved ones. Now that the nice weather is here we all want to enjoy the great and colorful produce that is at our disposal. I make this pizza right through the end of the Summer using everything from fresh berries to peaches. This pizza is a great addition to any brunch table. It’s a quick, easy and a delicious dish that is great to make with the kids.

1 store bought pizza dough or dough from your favorite pizzeria
1 8oz. container of mascarpone cheese or cream cheese (Room Temperature)
1 lemon, zest and juice
2 tbs. milk
2 tbs. sugar
1 tsp. cinnamon
2 cups of your favorite mixed berries (strawberries, blueberries, raspberries, blackberries)

Note: Mascarpone Cheese is the Italian version of cream cheese.

Mix cinnamon and sugar together, use half of the sugar on the dough before you bake it. Bake dough according to package instructions. While the dough is baking prepare the cheese topping in a small bowl. To create the topping mix together the mascarpone cheese, milk, lemon zest and the juice of the lemon. If the mixture is to tart you can always mix in 1 tsp. confectioner sugar. After the dough cools spread the cheese mixture on the crust. Top with berries, this is where you can be as creative as you want. Sprinkle the finished pizza with the remaining cinnamon sugar.
(Tips: If you use dough from your favorite pizza place bake at 400° degrees for about 20 minutes or until desired doneness. Make sure you have the mascarpone cheese mixture at room temperature before spreading it on the crust it will make it easier.)
