Easy Family Meals

Taco Tuesdays

In our 2021 survey you overwhelmingly asked for a weekly family friendly recipe.  I am going to try my best to help fill that need. I learned this recipe I believe in my 10th grade home economics class.  Our teacher, Mrs. Prew had very little patience for us but she did manage to teach me a few things.  It's been about twenty-three years since I learned this easy meal and I still make it every week for Taco Tuesday in our house.  

Mrs. Prew's Easy Tacos

2lbs Ground Beef

Jar of Salsa

Can Stewed Tomatoes

Iceberg Lettuce

Shredded Mexican Cheese

Bag of Tortilla Chips 

Directions

Cook and drain the ground beef, add the can of stewed tomatoes and the jar of salsa, simmer 2 minutes.  Chop or shred the iceberg lettuce and place in bowl. Lay tortilla chips on plate, layer with lettuce, taco meat and top off with shredded cheese.  

Simple, easy and kid approved.  I love the wave of nostalgia I occasionally get when I make these.  Now that my own kids are in high school and are not taking home economics in school, I have the pleasure of teaching them how to make Mrs. Prew's famous Easy Tacos.  I hope you enjoy!
