When it's dinner time, is cooking the last thing you want to do? Then I have got something for you! Your crockpot to the rescue again. I get out our trusty crockpot on the days that I just know are going to be a drag. After doing remote school all day I definitely don't want to stand at the stove cooking dinner. We have made this great easy chicken recipe a few times, I throw it all in when we break for lunch around 11AM so that it is ready at about 5PM.
In the crockpot, combine:
- 2-3 boneless, skinless chicken breasts
- 8 oz block cream cheese
- Packet of dry Italian dressing mix
- Can of condensed cream of chicken soup
Cook for at least 6 hours on low. Stirring occasionally
Shredding the chicken, and serve with pasta or rice. I usually have a reserve of frozen veggies I can throw in the microwave. My kids swear broccoli goes best.
