Grab a loaf of Italian bread and it is sure to be a big hit. This Tortellini Soup packs lots of fiber and is sure to fill bellies to the brim! Melt butter in pan and brown onion on medium heat for 3-5 minutes. Add vegetable stock, tomatoes and let simmer for 10 minutes. Add frozen vegetable and bring to boil. Reduce heat and add tortellini until the pasta is cooked through, approximately 3 min. Garnish with cheese and serve to a happy and hungry family.

- 32-48 ounces of chicken or vegetable stock
- 14.5 oz can chopped tomatoes
- 1 bag frozen peas
- 1 bag frozen Carrots
- 1 large bag of cheese tortellini
- grated Parmesan to taste
