Warm & Hearty Tortellini Soup

Winter is here and soups are a great way to feed your family a healthy  and inexpensive meal.  Great option after a long day of playing in the snow.  Grab a loaf of Italian bread and it is sure to be a big hit. This Tortellini Soup packs lots of fiber and is sure to fill bellies to the brim! Melt butter in pan and brown onion on medium heat for 3-5 minutes.  Add vegetable stock, tomatoes and let simmer for 10 minutes.  Add frozen vegetable and bring to boil.  Reduce heat and add tortellini until the pasta is cooked through, approximately 3 min.  Garnish with cheese and serve to a happy and hungry family.  


Ingredients

  • 1 1/2 tsp butter
  • 1 half onion chopped
  • 32-48 ounces of chicken or vegetable stock
  • 14.5 oz can chopped tomatoes
  • 1 bag frozen peas
  • 1 bag frozen Carrots
  • 1 large bag of cheese tortellini
  • grated Parmesan to taste
