Enjoy a Strawberry Bellini

Mother's Day has snuck up on me.  As someone who has worked in the restaurant industry for the last 20 years I haven't really had the opportunity to enjoy the day myself when I became a mother.  My children have long understood that I couldn't be there to celebrate with them but my husband has tried to make the best of it.  When the children were little he would help them make breakfast in bed, letting me sleep as late as I could before I needed to get ready for work.  Now that they are older, the children make me a great breakfast and we spend the morning together before the oldest boys go off to work.  This year I will not need to work and I fully look forward to sitting out on our little patio, eating my homemade breakfast and enjoying an amazing strawberry Bellini.  Moms, spoil yourself a little this Mother's Day and enjoy one of them as well!

Directions

  • Blend 4 cups strawberries, confectioners' sugar, and brandy together in a blender until smooth. Chill in refrigerator for 10-20 minutes.
  •  strawberry mixture among 4 champagne flutes; top each with about 1/2 cup sparkling wine; stir. Garnish each glass with 1 strawberry.
